marinated fish

Thread Starter

I catch my own fish, so this drum was fresh frozen, I thawed it out Sunday mid day.

Something came up and could not cook it , so I decided to marinate it in citrus (store bought) sauce.

Marinated over night, but again could not cook it Monday night , is it going to be ok if I cook it tonight.

I have never waited this long to cook fish. but I hate to waste a big catch.

If it is a citrus marinade it's probably cooked - it might even be over cooked.  Ceviche doesn't take long.

Mike is spot on.
By now your catch will be mushy.
I have no problem brushing on a flavorful citrus based seasoning just before it hits the pan or grill but delicate proteins like fish do badly if allowed to sit in an acidic maranade.

Well im a little late to the party, but heres my 2 cents...

If it was just marinating in all that acid , its probably a ceviche by now, probably over-cooked.

Check out its texture...

As mentioned by Mike: "Ceviche doesnt take long"

Its will be mushy.

Maybe drain the acidic juices and gently pat fry with paper towels.

Toss some flour and fry.

If not make a tomatoe based stock and make a fish stew with it.

That or chuck it....

Wow! That was a great idea. You can add up some spices as you marinated the fish with citrus. it would be more tasty and delicious to cook.
