When I finish each task, can I keep my carbon knife in the knife stand with the water?
I work in the hotel that have the knife stand with the water for keep the knife. They don't have the knife stand without the water.
Will my knife get rust?

that sounds particularly unsanitary - but perhaps I'm not understanding.

water + carbon steel + time = rust
for ten minutes, no rust
for hours, rust.
and stuff like diluted acid from foods cut with the knife and dragged into the water will make corrosion happen faster.
At my last job, first day, notice all knives going into a plastic cambro filled with sanitizer.
Left all day, pulled out for use as needed.
Explained that the 1 inch layer of food scraps floating on the surface wasn't really sanitizing anything, especially 7 hours into a shift.
Not to mention that storing knives in their natural enemy is counterproductive.
Put a stop to it.
I'm sure they've gone back to their bad habit since my departure.
