When making sandwich platters or dessert platters, how many pieces per person do you allow for? This would be for an event such as a lunch or funeral or late night buffet.

Budget, sandwich size, length of event. sometimes on something like this we would sell X # of x size sandwiches at X$....(perhaps sell sets of 24 ) have the client decide. Could work the same with adding desserts too.

Too many variables.  Time of day, weather outside, more women then men.

Each one mentioned,lunch funeral late night buffet, has there own numbers.
