What do you use milk solids for?

Over my many years as a chef I never used the milk solids after clarifying butter, all chefs I worked with just threw them out.  My question is what do you enjoy using them for and what's the best way to utilize it in a professional kitchen. I clarify about 50# of butter per week. Happy cooking to all.

Cook them down until they're brown and incorporate it into an ice cream base

As part of a fish marinade

Knowledge is knowing a tomato is a fruit. Wisdom is not putting it in a fruit salad.
