My newest Matfer Quiche Pan with 2" tall sides

It's the bomb with those high sides, better that what the other producers like Norpro make.   Deeper flutes, way deeper.

Best and I'm a foodie.   I know very little but the little that I know I want to know very well.

(EDIT):  And feels  much much heavier in comparison to other brands of tart molds.  Matfer sells quiche/tart molds at about two to three times the price of their competitors but you'll see a huge difference in the depth of the flutes and their width along with the weight or gauge of the metal used in its construction.  For some reason like more metal used to make it, the wider and deeper the flutes, the more expensive it is.
