I am looking for a pan that can handle high heat, has nonstick properties, and is light enough to toss food with. I will mostly be using it for stir fry. I love my cast iron skillets, but they are way too heavy to toss with. I've been searching for a carbon steel fry pan but can't find any locally. I have a glass cook top so a wok is not an option.
Has anyone used one of these? If so, what are your thoughts on it? I'm trying not to be the guinea pig.
