Breakfast in southern Japan - grits and bacon, edo style:

I  have never developed a taste for grits, every time I have been served them they have been, well, gritty in texture.

not cooked long enough.

 

I use only the old fashion non-instant stuff - low heat.  there is no grit to it.

A friend who is married to a woman who grew up in North Carolina told me about Yelton's Best Stone Ground grits.  Very nice, as is their cornmeal:

Going to be trying to grind my own cornmeal next fall. Looking for a good variety of corn for it. I bought a new flour mill that can handle corn, nuts, pretty much anything I can feed it.

Here in the deep south ain't never had gritty stuff.  Real grits are smooooooooooooth.  Really.

Best and I'm a foodie.   I know very little but the little that I know I want to know very well.

Some years ago I was attending a sports car gathering in Savannah, Georgia.  One morning the gang, (about 12) went to the Denny's down the street from the motel for breakfast.  I ordered grits as part of my meal, keeping in the back of my mind the usual expectation of food at Denny's.

 

Boy, was I proved wrong!  I was expecting grits like I get at the Waffle House in Indiana - not even close.  Yum, yum, yum!
