OK. Here's what's up. I own a hattori hd240 Gyuto, I love it but its just a bit to short. I want to get a great knife for choppin vegetables and what not. Hattori's Gyutos are great but a little light weight for what i'm looking for here and apparently the Western deba is not coming available anytime soon. so. I have had some MACs before and I am leaning towards the Ultimate 9". I still use to this day a MAC boning knife I got more than 10 years ago. Any real opinions of MAC ultimate 9" are welcome, tell me what you think. I like the Idea of a legit 9" knife as opposed to a 270mm(9.4") but if someone out there can point me to a good, well balanced (and kinda heavy) knife, throw your insight my way. Thanks!!

Your mm to inch conversions seem a bit messed up: 240mm is 9.4", so if your current hd240 is too short then a 9" knife isn't going to help. (Unless it's actually a 210?) You say you prefer a
but 270mm is 10.6". Do you mean you want a knife longer than 240mm, or shorter than 9.4", or do you want a round number of inches without any (illegitimate?) fractions?
