Cocktail Party for 150 people

I am new to this forum and I think it is fantastic. I am new to the business and just received an opportunity to cater my largest event ever. It is a cocktail party for 150 people for a 50th birthday party. he hostess only wants finger foods. The menu I am presenting to the hostess is as follows:

 

 

Veggie Trays

Meat and Cheese Trays

Shrimp Cocktail

Chicken Satay

Meatballs in cranberry sauce

Pork Riblets

 

I have done smaller jobs before but want to ensure that I am preparing for everything I need, have the proper amounts and am charging correctly.

 

I have calculated what I will need for the riblets and chicken satay.

Can anyone give me some suggestions on the amounts of shrimp and meatballs?

 

Also and I guess most importantly since this is my first big catering opportunity how do I charge this event?

 

Any suggestions would be greatly appreciated..

4-6 shrimp per person. 2-4 meatballs per person depending on the size. I am not savvy in the pricing department yet, as I have never personally been the head chef of a banquet just worked them. 

 

Should be easy to execute though. Can basically prep everything you need day before and heat or in the shrimps case throw em on ice after cooking day before and your golden.

What time of day is the B-day party?

Is it going to be during the dinner hour, an afternoon function or late night?

Will it be inside or outside?

Will there be kids?

 

These questions, answered, will help define amounts.

There will be no children in attendance... It will be in the afternoon from 3pm to 6pm.. and will be inside...
