After working for the past 7 years managing the event division of a large catering company, I handed in my resignation so that I could open my own patisserie. A short response before I leave for work. Set up a sales tax account. The bank knows how to do this. It is easy. The sales tax is NOT your money and WILL be collected on the date due. Put it aside in the account. Daily amount will seem small. The amount due on collection date will not be. There are zero excuses for not having the money.
