Chick Peas on a grilled cheese

Hey y'all, I'm making some eclectic grilled cheeses tonight.

 

A pear and blue cheese one on homemade amish white

 

A cheddar bacon apple one on same bread

 

So, I also have some chickpeas I made and seasoned with a little chili powder, paprika and cayenne pepper. I want to make a third grilled cheese with cheddar, chick peas, homemade amish white bread, and....WHAT ELSE???????????

I was just talking about this with hummus so I'm going to say kalamata olives! But if your cheddar is very sharp the two might overpower the chickpeas.

Toast some cumin seeds and crack them. Diced sun dried tomatoes would also work for great.

I did grilled cheese tonight too, but bog standard.  Medium cheddar and ham, served with a tomato basil soup.  Given last night's fried chicken and home made cornbread muffins, you'd think I was on an old school comfort food kick.  This weekend I'll probably do a lentil based curry, but then again I've not worked with chickpeas much.

I usually add them to an antipasto or pasta salad. I would go with a Muffluletta -type sandwich layered with marinated olive salad, mortadella, salami, mozzarella, ham, and provolone. Or, you could add Giardiniera, or roasted sweet red peppers, sliced red onion, avocado/bacon/tomato.  Have you tried roasting the chickpeas?  I would add anything that will give it a little texture & crunch i.e. mixed greens.
