Hi, I'm starting a restaurant but the unit only has a 2 foot canopy.
Can I install any type of hood or it has to be under a certain specification?
I notice alot canopy are 8-15 foot, mine is only 2?
Check with your local FireMarshall or whomever is in charge.
Usually the canopy has to extend x number of inches past either side of the equipment being used under it. Usually 6" is what i've seen.
It's probably an old installation that doesn't meet modern code, maybe a single 12" wide fryer?
