I see them used in European kitchens a lot, they're very thin, look to be made out of cast iron, and have a long handle. I see them a lot on French tops. We're using a planch kind of like a french top, so we want those thin pans that get hot quickly.

Debuyer for sure! condition it like cast iron never wash it while its hot, and never never soap
