 Hello there chef Talk.

 I am  Head/ Executive Chef of a new opening hotel with a brigade of 25 or so down here in the southern Languedoc region of France,  which for the non-geographically inclined is   in the SW Mediterranean.

 We cater for primarily Olympic athletes who use our training facilities, and for the tourists who come down the Corbieres wine trail ( we are an AOC Domaine and a 11th century chateau that grows 30k bottles a year)

 Not too many chefs around these here parts, so having the Forum will be good :)

What a journey it is that you’ve been on.  I hope that you will share some of that in the Culinary Student forums, I’d be willing to beat that you have a lot to offer those kids.
