Sour cream + vinegar

What will happen? I want to ake a sort of tartar sauce but using only sour cream and no mayonaisse at all. I would like to use a little bit of ACV for this.

It shouldn't curdle. I've had cucumber salads based in sour cream and vinegar before.  The texture will be different between thinned with vinegar and thinned with mayo as will the taste and mouthfeel. You might try some plain yogurt to replace the mayo instead of vinegar or even some of the sour cream. Quark could be fun as well, but it's hard to find and expensive when you find it.

Alright thanks. I will try it out with sour cream and half yogurt half sour cream.

 

Quark is available everywhere and is cheap where I live, I can probably consider myself lucky in that :)

You could also use Sour Cream, Cream of Tarter and some Lemon Juice to make a slurry out of the cream of tartar so it incorporates better.

 

Then add in whatever combo of diced sweet bread and butter pickles, gherkins, onions, shallot whatever you like. 

 

I've actually done batches with finely diced red, green and orange sweet peppers for sandwich spreads. 

 

You want to use a full fat sour cream, creme fraiche would also work depending on the end use.

 

I've actually done tzaziki with sour cream... not authentic but the locals had never even heard of calimari back then either.  Sold like gang busters.

 

- if you don't mind a darker colour you can use worchestershire sauce also with some creme of tartar.  Give it that special ancient feel.
