so i am working on dessert menu for the new restaurant and have found out today that i do not have ice cream makers available for use.
how often do you need to stir/whisk the mixture once its hit the freezer? i was thinking it would need to be done every 30 minutes until it begins to stiffen.
anyone else have any tips for me? have only ever done ice creams and sorbets in a machine.
