Cinco de Mayo - What are you cooking up?

It's just around the corner.  What are you cooking up - your favorites?

 

Admittedly, Mexican cuisine is not one of my favorites.  Inspire me.

I made carnitas burritos for a special today, shredded jack, seasoned rice, Peruvian beans, tomatillo avocado salsa, cilantro & onion all wrapped up in a 14" flour tortilla.

Sometimes I will also add finely diced cabbage.

I made tacos. I used Mrs. Dash's taco blend rather than the usual Penzeys taco seasoning blend because I'm trying to cut down on sodium. It was really pretty good, and I added just a pinch of Kosher salt to it. My husband thought it was a bit zestier than our usual, but I thought it was more flavorful, not just salty. He was actually tasting the seasonings, not just salt. I loaded mine with cilantro. Yum.

In celebration of this day i grilled mexican white shrimp(13/15) marinated in cilantro and garlic ...pollo asado(thighs).....on the side was organic black beans with sea salt...grilled white and red onions and sweet red peppers...a tomato, avacado, jalapeno and green onion something or other and homemade( my first attempt) blue corn tortillas...lots of limes, damn the expense!
......mango margaritas. Ole! 🌵🌵

dang, that sounds great @durangojo 

today is also Boy's Day in Japan, for this we had for dinner teriyaki chicken and fried rice and some pickled veg (namasu)
