guide for a rib-eye steak and pan sauce in a fully clad stainless pan

Hi guys I just took delivery of my new cuisinart multiclad pro and have just bought 2 nice 1" thick rib eye steaks I want to cook a nice meal with a cream pan sauce could someone give me a guideline/recipe ?? Ie on gas stove or stove and oven etc

To cook the steak heat the pan over medium heat, add just enough oil to coat the bottom then add the steaks. Don't touch the steaks, try to move them etc until they move with a shake of the pan or the nice crust will come off. Flip cook on the other side until done to taste. May need to lower the heat if you prefer well done meat. My steak rub is a simple salt/pepper/garlic powder/onion powder mix. To that base I sometimes add herbs like rosemary and a tiny bit of dill. You can't taste the dill in that blend but it adds something to the flavor that makes people go hey this is good what is it. Other herbs work too, go with what you like. I grind the herbs to a powder to make them blend in the rub.

 

Pan sauces I am not big on so I will leave that to others. Most I do is a splash of beer or wine, reduce, pour over the steaks

Once the steak is removed from the pan, add a shot of quality brandy/cognac and once evaporated throw in some chopped garlic and a squeeze of lemon.  Let reduce a bit and then add a TBS red wine.  Reduce.  Then add some heavy cream and a rosemary leaf or two and reduce to brown bubbles.  Pour over your steak.

@tinsop:  thx for the rep.  You can also flambe the steak with the brandy/cognac/whisky  just before removal from the pan.
