Can anyone provide information on allergies common amongst chefs. I understand contact dermatitis is quite commonplace, but my son has had a reaction to something- swelling hands felt faint a rash which resembles hives/prickly heat. There is no rash anywhere else on his body and the rash is only present from where the chef white sleeves stop. It must be something he is exposed to on a daily basis because he had a rash and then it rapidly got worse. He was using non latex gloves and uses liquid paraffin to moisturise his hands and does not use chemicals/detergents without gloves on so we can only assume it is food? we need to find out what has caused this so any information would be appreciated

Fresh Pineapple, Kiwi,,Mango,,Papaya all tropical type fruits that could cause this. With some people its fresh berries everyone is different.

What foods is he working with?  Papaya contains papain, an enzyme that breaks down protein, for example.

He is working in a brand new restaurant- completely refitted. He has been working in the industry for 2 years and is mainly responsible for starters- but they are dishes he has previously been involved with and the ingredients are similar. Only differences are  equipment, knives etc and  he was helping out by peeling loads of potatoes and we wondered if it was that? Starch? It is on the back of his hands not the front which is odd but the swelling is all overthe hands and the skin is so tight it is cracking He hasn't used papaya - but has used lime recently

Only fruits he is really coming into contact with is grapefruit and melon. We are still thinking it is potatoes but this is only an assumption. We are thinking of having a diagnostic screening for allergies but are unsure whether this is proven

Was anything other than water involved in the preparation of the potatoes such as in washing before peeling or soaking after peeling.
