The Stage' (sto-ahje)

To any Pro Chef out there.... Needing some encouraging advice on a Stage I have in a few hours.... Been a Line Cook for 5 years.... And being Staged for a Sous position.....I'm going out of my mind..and very nervous..why ?...

I was in a hiring situation similar to yours. I had a mystery basket to produce a four course meal for a panel of 8 judges, some of them CMC's - it was nerve racking to say the least. As I came closer to my start time, my nerves were getting the best of me and I wasn't sure how to calm them. I thought of my kids - I pulled a picture of them up from my phone and just smiled, remembering why I do what I do. It was a great source of strength for me at that moment.


Your user name chef mom suggests that you are a parent - think of providing for your family. Crush all challenges before you that stand in the way of providing for your family.


Take a deep breath, make good food, don't cut corners.

being in the trade myself, one woman to other: seems like we are longer line cooks than our male collegues.

so by all means, GO FOR IT GIRL!!!!!
