Hello all,

I am looking for an edible substance that is a solid when dry and will turn to a liquid or dissolve when introduced to water.

Regards.

As in a food thickener?

Something like jello ? It starts as a solid, it melts in water and because of gelatin can act as a binder .

If you share the specifics of what you are trying to accomplish, we might be of more help. So I guesss you want a water soluble binder, what are looking to bind? What temp range are you trying to use? When you say solid, that could mean a whole range of things....

Really interested in your project...please spill!

OBTW...welcome to Chef Talk...glad to have a server aboard!

Had a lively debate a few months back and wished for another tip dependent hospitality employee to come weigh in.
