Can I freeze fresh minced meat, freeze, cook and freeze again?

I plan on freezing meats for cooking at a later date.

 

Is it ok to do this:


- buy fresh minced chicken/pork raw
- freeze it
- unthaw the meat at a latter date
- bake/cook the food into meatloafs/cottage pies
- freeze the cooked food
- reheat the food for consumption at a latter date

This is for ready to eat meals for food delivery.

Bruno, in my experience over the years I would be lying if I said the places I worked at didn't do that. It should be fine , but wouldn't advise it. After being cooked the food would have to be properly cooled and as we all know freezing food loses it's quality of flavor. Should be okay though , hell we do it with stock all the time

But not very encouraging...

 

Most home cooking forums say it's fine and they do it all the time...

 

Can any Chef confirm or infirm is this is ok?

Personally, I will only thaw something one time in my kitchen. I will also only RE - HEAT something one time.
