I am head chef at a small but busy gastropub. My vision is good traditional pub favourites with a twist. Currently serving our version of a Lancashire hotpot, fish and chips, pint of prawns, steak garni and more. Everything has a bit of a twist from the norm for example our steak garni is ribeye steak with a porcini mushroom rub and served with oven dried tomatoes and crispy onions instead of the more traditional grilled tomato, mushrooms and onion rings. Any other ideas for some traditional pub grub with a twist?
