Need some advice, new poster by the way

  I've been working as a line cook for a "gourmet" burger and hot dog place in LA county.  I love the prep work, and the hustle of the lunch and dinner rush, but I'm lost in what to do next.  I want to create dishes that aren't slathered in mayo and grease, I want to learn about different kinds of cooking techniques and get better at my knife skills.  So my question is, should I attend a culinary school, or an apprenticeship? Thanks

To me it sounds like an apprenticeship would be a step in the right direction for you. Plenty of chefs would love to hire someone who is hungry

Your attitude is refreshing and will open lots of doors for you. Finding a chef willing to take you under his wing shouldn't be too diificult. You sound exactly like the type I love to see come in and apply for a position. Good luck!

Just my 2¢, if you decide to go to culinary school, which is not a bad idea, i went through a community college program. Get the basics, get back out there and apply it. Work while you're in school though; its good practice for the real world. Not too expensive either.

Start researching restaurants to learn which are chef driven. Pick one and go to apply between lunch and dinner. Don't initially ask for an application, instead ask to speak to the chef so that you can plead your case. If you have to fill out an application, after completing it, again ask to speak to the chef. If he is busy, ask to set up an appointment for an interview. If they won't set an appointment but say he will look it over and call if interested, thank them for their time. Return in a few days and inquire if the chef is available to speak with you. If a no go repeat again in another few days. If still a no go try again in a week or two. etc etc etc

 

Do this with as many restaurants as time permits. When you do get the opportunity to speak with a chef, if he has nothing available at the present time, ask him if he knows of other chefs that might have positions available. The chef world is a small close knit community and we generally talk among ourselves and so you can probably get some good leads. If nothing develops from this initial meeting don't despair and check back every week or so.

 

Your job and your chef are out there, go find them.
