Those Hiromoto AS gyutos that get the full Dave Martell (Japanese Knife Sharpening) treatment look stunning, and the thinning presumably improves the performance, but I am wondering how good those knives are in terms of performance. Anyone with experience with one of those? I am willing to pay for aesthetics and ergonomics, which you clearly get with that treatment, but would I be getting much in terms sheer cutting performance if I were to purchase such a knife?
