what gourmet foods to explore

Now that I can afford it, I've recently decided to explore the gourmet, haute cuisine, "foodie" world. Can anyone recommend gourmet foods I might like to try, other than the ones I've already started to delve into, namely: • alcoholic beverages (such as beer, single malt scotch whiskies and wine) • caviar • cheese • chocolate • coffee • cooking oils and fats (including olive oil) • escargot • fois gras • fungus (such as mushrooms and truffles, the latter being a form of fungus, but not a mushroom) • meat (including fish and shellfish, pork and Wagyu beef) • vinegar (including real balsamic vinegar and many others) I'm looking for "generally accepted" gourmet foods, not exotic, crazy things, and I don't care for "sweetbreads" and other offal. Thanks for any help anyone can provide

You mentioned meat, but I am assuming uncured.  You may want to look into charcuterie - salami, proscuitto, brasola, lomo - a very wide range.  I'm not talking Gallo and Boar's Head here, I'm talking handcrafted, artisan jewels from the hands of the masters of salt, meat and time.

This is a great idea. Thanks for the tip. No, I don't live in a big city, but I know a very special meat vender at the local farmers' market, and I think he might have specialty items of this type. Thanks again.
