Hello from Dallas, TX.

Hello from Dallas, TX.  Been a chef now for about 12 years, former suit and tie corporate type.  Got out, went to culinary school and have managed a deli, been a private chef, run a few culinary businesses, and am now a Chef/Instructor for Central Market here in Dallas.  My wife is a chocolatier and owns a candy company.  Its all in the family!  Looking forward to interesting food talk.

What a journey it is that you’ve been on.  I hope that you will share your wealth of knowledge in the Culinary Student forums, I’d be willing to beat that you have a lot to offer those kids.
