Anyone working with bycatch? As daily specials? Do you have any purchasing concerns? Health issues? We are being encouraged to offer bycatch on our menus and I'd like to learn more about other chefs experiences.
@Lagom Non targeted species in say a trawl net or by any other means.
I live at the beach, there are several fisheries here, tuna, salmon, shrimp, crab, someone always has a bin full of bycatch of some sort that falls off the back of the boat when it comes in, always inexpensive.
Thank you Buba, I didnt know that term. With a resounding yes then I would try to use it when it fit into my cooking, Ill have to look and see what thay have here, and what its called in swedish, next time I'm down at the auction.
