Infusing Fresh Truffles With Oil

Hi There

 

I was wondering what is peoples preferred choice of oil when infusing truffles and which methods they use and which

yield a stronger flavor profile and aroma etc.

My plan was too just cold infuse with grapeseed oil with a few slices of perigord truffle in the fridge for a week.

Please let me know of your thoughts

Truffle oil, of any kind, should always be avoided. If you wish to throw some black truffles into some grapeseed oil and hope for the best while it sits in your fridge, I encourage it. 

(Note: Don't do that)

I would be very careful if you're going to do infused truffles, or any other herb, yourself. There is significant risk of bacterial growth and spread. Many bacteria are anaerobic and prefer low acid environment both conditions met during oil infusion.
I prefer to mitigate liability by buying infused oils from an approved source. Truffle oil is readily available commercially there is no reason to expose your kitchen to litigation over something so easily mitigated

I agree with Lucas on everything he said, it would be a waste of truffles. 

That and truffle oil stinks, smells horrible (maybe its just me), and the taste is just to direct and over powering. 

I rather just lightly shave truffles onto a dish. 

 

Getting grape seed oil and just cold infusing truffle, yeah i wouldnt attempt it.

What is the oil going to used for? Is it going to be a finishing touch for dishes or is it for a stand alone use. If used as a finishing touch or a means of injecting truffle flavor into a dish, I would probably make truffle salt instead, safer and longer shelf life.
