Day old donuts in cookie recipe

There is a bakery in our town that uses day old donuts in their oatmeal cookies but I can't figure out exactly how to do it. They have sold these cookies in a pack before and listed the following as ingredients: Bread flour, salt, whole eggs, raisins, oats, brown sugar, veg.shortening, corn syrup, and baking soda.

Any ideas?

Im guessing they process these donuts and mix it in with the dry ingrediants.

The cookies probably contain less flour, since the donuts also help bind, and by cutting down the flour and substituting for the donuts the cookies wont be so dry, what would usually happen if they didnt use less flour.

Thanks KaiqueKuisine. I tried subbing some of the oats with donuts but it wasn't quite right. It was really good but not like theirs. If the recipe calls for 2 cups flour do you think I should sub with all donut or maybe just 1 cup ground donut and 1 cup flour?

Im thinking cut half the amount of oats and use 1/4 less of flour.

And sub those in for the donuts.

Just guessing, but that is what i would do.

I would throw all the dry together, add liquid and soak. Adding white raisins and some nice sweet flavor to enhance the spice.

Thanks! I'm going to give it a shot!

Any other ideas are welcomed. This is all new to me, never heard of using donuts like this.

Panini you read my mind, i too thought about soaking, but since the recipe didnt call for milk i knocked the idea out.

But i would def suggest soaking it a bit in milk.

Soaking all the dry ingredients in milk?  This is a new concept to me. How long would they soak?

No just soaking the donuts lolol.

The same you would do when making bread pudding etc...

Soak them in liquid to make moist, and kind of get rid of the staleness.
