I am FREAKING out. I will post a detailed blog about my trip and time at TFL. I'm hoping that I can extend my stay with a job. I am sick with excitement.

A while back we were having a discussion. I made an assumption (and you know what they say about assumptions), that you needed to be pretty skilled even to get a stage at a kitchen of that quality, and that those skills would have been equivalent to a more experienced cook or even a chef in a lesser house.
Another person claimed that even the commis at French Laundry is called "Chef"
Another person claimed that anyone off the street, even with no experience was welcome to cook at French Laundry. Perhaps you can let us know the reality.
