8 or a 12 rack rotating Baxter OV310G oven?

The Baxter rotating convection oven can hold up to 12 racks however the space and size of the oven doesnt change. So if I was to use the 12 rack option how would that effect baking a full oven of cookies? Do you think I would still have uneven baking? Even more so than the 8 rack because of the air flow? Just trying to make an educated decision before buying the racks...

 

The reason I would want the 12 rack is because it can obviously make more for a high production demand, but does it really if the cookies don't have enough airflow causing possible uneven baking???

Those are nice little units. The 12 rack is probably going to cut you from 4" to 3" I think the air in south to north. so it may even help a little. I would certainly get in touch with your rep and see if he has a video of the product results between the both. I'm also not so sure they can't adjust the air flow on those units, the lower the better. I know they have a pretty flexible panel for roasting, baking and so on.
