Killer buttermilk pancakes

Anyone have a killer buttermilk pancake recipe, preferably by weight and in a large batch. I'm talking like, the best pancakes in the city kind of good.

Make dry mix in bulk

10 1/2 pounds ap flour
1 1/4 pounds sugar
2 ounces salt
8 ounces baking powder
5 ounces baking soda

To mix

1 egg
1/2 cup buttermilk
1/2 cup milk
1 cup dry mix
1 tbsp butter

I usually do 8 eggs, 1 quart buttermilk, 1 quart milk, 1 stick of butter, 8 cups dry mix for a batch it'll fit a large Bain insert nicely. This is pretty basic but a mix when made will keep for 2 days and is fairly tolerant. I recommend unbleached white flour for all baking and this could be improved on by using good eggs, butter, milk and buttermilk.
