Indian food

Hi everyone!


I am getting more and more fond of Indian food, are there more of you out there? I was wondering whether there is a website with true authentic Indian recipes, now I just look at Jamie Olivers World Food category. People told me that it takes a long time to make authentic Indian though, which is difficult as I work full-time and have to pick up my kid from school. However, the hassle is worth the smile on my husband's face when he smells the spices. Do you often cook Indian and what is your favourite dish?

I am quite fond of Indian food. Not all of the dishes take a long time, in fact I'd say if you have your spices on hand most dishes don't take longer than about an hour to cook. I have this book and can recommend it as an excellent source for Indian cuisine that spans all of the vibrant regions and is broken out also by protein source. So if you happen to have fish you can flip to the section that lists curries for fish, or poultry, or lamb/beef, etc. It also goes into background information on the regions and cultural influences that show up in the food.

A pressure cooker is a good aid to Indian food. It's a popular tool in India as well both for the fuel reduction and the time savings. Madhur Jaffrey often includes pressure cooker directions in her cook books, though a pressure cooker is not required either.

Good Indian cookbook authors are Madhur Jaffrey, Julie Sahni, Yamuna Devi (Vegetarian and from a sect that doesn't use onions or garlic but she somehow makes it work), Sanjeev Kapoor (a very- famous- in- India cooking show host.) I don't have it (yet) but people adore that 666 Curries book.


I use Madhur Jaffrey;s and Kapoor's books the most. Not everything takes a long time but it does take you on a spice hunting and accumulating journey. I'm lucky to have a big Indian-Pakistani neighborhood nearby with great markets but my spice cabinet is bulging. I cook a lot of Indian food.
