Should I get back into cooking to become a professional

So I previously worked in kitchens for about 18 years, 16 of those were in a city which really didn't offer me much opportunity to grow as a professional. But upon moving to Vancouver 2.5 years ago I decided to switch career paths and start an apprenticeship to become an electrician. So between school and work I have been doing electrical for 1.5 years now and so far I am feeling very uninspired and am thinking about going back to kitchens.

 

The restaurant I was working at when I first arrived in Vancouver really seemed to like me and I enjoyed it there, and they targeted me to be groomed to become a sous. But I already committed to the electrical program and wanted to give it a go. Electrical, the hours are ok I work 7-330 Mon-Fri and it's decent money and will only get better. But I find I'm missing the relationships I built in restaurants, the people and the feel of the organized chaos.

 

If I did decide to go back I would end up going to culinary school or preparing myself to challenge the red seal exam.

 

Just wondering what you guys think>? I wanted to get some opinions from some professionals out there. Any advice would be greatly appreciated.

I understand you requested opinions from professional chefs(which I am one), however, from a personal stand point, you should always go with what your heart wants. While you have already changed career paths and you make good money, it's not worth it if it's not what you want to do. Being an electrician will never allow you to make those relationships you want to be able to make.

 

Your personality seems perfect for the culinary world. Being a chef is all about making relationships with the customers you serve through your food as well as personal interaction.

 

Now from a professional chef standpoint, I would suggest going back to culinary school and chasing your dreams. There is nothing like  watching a customer eat your feed and see the grin on their face knowing they think it's delicious. I hold no regrets from choosing this path. If being a chef is really what you want to do, then do it.
