Uses for candied bacon drippings?

The Candied Bacon falls on the Pastry / Garde Manger Dept. at my kitchen, and I'm perfectly OK with that.  

What I'm NOT OK with is pouring all that delightfully succulent candied bacon dripping off into the grease trap.  I'd really love to come up with a practical (sellable) use for all this liquid love.


This weekend I'm experimenting with a few Confit's in the Candied Bacon drippings, especially the wild Canadian goose breasts form last seasons harvest.

I've got a pretty decent bacon fat pastry crust that makes a delightful carrier for apple pie that I'm going to try to use the candied bacon fat in.... night be good, might not?

Off topic but isn't it illegal to sell prepared (uninspected) game in an establishment...

Good point, always best to know your local laws and if in doubt ask your local inspector!
 

In TN, as long as you have the appropriate permits (from DNR) and inspections, and hit the required temps you are OK.
(155°F for 15 seconds game animals commercially raised and 165°F or above for 15 seconds for wild game animals)
