My grandmother made salmon croquettes ( from canned salmon ) for me as a child. She might not have told me how to do it, but I remember a beaten egg & &matzo meal was used . Inevitably salt and pepper. It was all mixed and then fried in butter. I can't remember anything else she might have put into it. Anything like breadcrumbs were not employed( I think.) Does this sound like anything is missing, or have I got a good recipe?
