I want to cook Chana Saag (Indian spinash, chickpeas, tomatoes and onions) for the first time. I've seen many recipes online but none that really strike my fancy. I want to use fresh ginger and garlic, spices, but no coconut milk, no condensed milk. I'm trying to reproduce what I've had at my local Indian restaurant which was very good. 


Has anyone made that dish before? Any idea how to go about it? I have some chickpeas soaking and some fresh spinach in the fridge. I have some garam masala on hand, and all sorts of spices, coriander, mustard seeds...


Any pointers or links to recipes are welcome, thank you!
