How Do Patisseries like Jean Philippe Patisserie keep their cakes moist in the cake display?

Dear Chefs,

 

I just love looking at all the lovely cakes on display at the cake display fridges.  However, I am just wondering how in the world do they keep all their cakes moist & fresh?  I thought fridges will dry the cakes out.  Any thoughts on this?

The display cases are humidity controlled.
