I often put them in sandwiches and a favorite burger topping includes a pepper and thinly sliced red onion. And I was thinking of making some squash soup, I bet peppers would be a nice addition to that.

I use them in salads... for example:

- chick peas

- cucumber

- avocado

- soft boiled egg

- Comté cheese

- roasted bell peppers

- home made herb croutons

- cornichons, or capers

+ dressing = dijon mustard, sherry vinegar, shallots and/or crushed garlic, olive oil.

I use them in my regular pasta sauce, also alone with cream or in concert with roasted tomatoes and garlic, in an antipasto salad, and yes as a dressing like Italian roasted red pepper, your regular Italian dressing recipe and add a roasted tomato and blitz, or as a roasted red pepper vinaigrette, added to an Alfredo, as a compound butter. One of the staples in my kit is a combo or roasted red pepper, garlic, onion & tomato, use this as a  bruschetta spread or as a quick pasta sauce.

Cheers!

I always loved a simple chicken wrap with them.

Roland Fire roasted pepper

Basil

Marinated chicken with thyme oj ( or whatever )

And whatever else you wanted to add. :)

You could also do a  roasted red pepper tapenade with them.

If you can get your hands on a bottle of pomegranate molasses and a bag of pita bread, you should really try muhammara.

It's delicious.
