Can anyone recommend a book of great recipes that uses starches, specifically pulses? I've made Red Lentil Coconut Soup and Vegetarian Chili (both from 101cookbooks.com) a part of my usual diner menu, but I want to learn to make more with pulses or other starches. I want to learn to cook various flavorful, interesting, soups, salads, pan-fried, etc. foods that are fairly easy and affordable to put together. I love indian, asian, south american and middle eastern cuisine (I had a Moroccan Chickpea soup once that changed my life).
Mostly looking for vegetarian dishes, but open to a little beef/poultry/seafood in there wherever needed.
