Heston Blumenthal's Roasted potatoes

All,

Yesterday I tried Mr Blumenthal's Roasted potatoes from his book "At home". However, I found the roasted potatoes quite hard and "gummy", like I didn't get that crusty part. I did follow the recipie carefully though. Maybe the sort of potato was wrong?

Do you have any tips for getting the potatoes as crusty as described in the recepie?

Not familiar with the recipe but I always use russets and bake at 425. Toss with oil, herbs, chunks of onion then into a pan...
