New guy checking in

A little intro about myself. I'm from the south, Alabama to be exact. I haven't been in a professional kitchen in a long time. But I enjoy to cook for my family. I've thought about getting back to cooking in again part time. I'm self taught, or picked up things here and there, had thought about going to culinary school, I bought myself a good set of knifes instead.

@M Buchanan "Thought about going to culinary school but bought a good set of knives instead..." That is the right move and if only others would consider your sage advice they would not saddle themselves up with massive debt for a degree they can actually get paid to learn.  Since I left the kitchens years ago like you I have enjoyed that I cook more for my loved ones than I ever did when I worked in the kitchen.

@M Buchanan wise choice IMO.
Had you gone the school route you most likely would have had to buy a good set of knives anyway.
