I'm trying to self educate on kitchen management,,, I'm trying to find like a kitchen management textbook or something,  I'm pretty good at reading to self educate,  I'm just not finding that much resources online

Wily is a good choice as pointed out by cheflayne. Also try the national restaurant associations Web page for links to more it's pretty useful

Cornell University school of rest. management has put out some excellant books over the years.
