Cheese whiz too hard

Hi I have a question. I'm making philly cheese steaks at my restaurant and I'm using a can of cheese whiz the original stuff. I have a double broiler to keep the cheese hot but it's keeping getting hard. What do I need to do to make this cheese liquidty all day ?

You're going to have to hold it hot. I would say melt some velveeta & hold it in a bain or a steam table. If you're still having liquidity issues make it a cheese sauce with some half and half to give a little morre liquid content.

What temp are you keeping it at?
Do you stir it?

If i remember correctly there were 2 street vendor eateries across the street from one another in Philly, one boasted of using a white cheese " maybe provolone?" and the other using cheese whiz and both claimed they were authentic Philly cheesesteak sandwiches. Kind of a food war thing. So i believe it is sometimes used localy on this sandwich.

Yeah, I'm not into it, but I've known plenty of east coasters that swear by it; so it's a thing, like it or not.

They do spell it Cheez Whiz, so it's not actually food, right?
