I am starting a new restaurant in Washington State and need some imfo on what all I need as far as ventilation will have a 6 burner gas stove single convection oven and dual fryer.
@ChefJasonB was right no point... Every state, city, county can have different requirements. The health department would be the best place to start... On a side note, where in WA are you?
You'll need a hood and ansul system the covers all your equipment
