I was a pastry chef at a 5 star restaurant. I have now decided to open my own business as a private/personal chef. Boy do I have questions...lol

Welcome. I respect your decision working in a high level restaurant really requires so many hours and does not offer much life outside of work. Running your own service will hopefully give you a better quality of life. Glad you joined CHefTalk.
