Best dish

If this topic has been ran before then I apologize. I just wonder what your best dish you ever created was. Was it at home? School? Or a new menu item?

I would have to say my best dish I probably ever made was hamburger bun seared in bacon fat, topped with sircacha sauce covered chicken dipped into a flour base batter then pan fried topped with a over easy egg and cooked bacon, finishing off with melted provolone cheese.

Funny, there are many ways to interpret this question.  The dish that makes me happiest is one that was done on the fly just following my instincts - completed 10 min before opening.

Twice Cooked Potatoes with Scallions, Chinese Sausage, and Kaffir Chipotle Aioli.
