Hi folks. . . Carl Buchholz.  Small farmer in Oregon's Willamette valley, avid home cook, sausage maker.  Was searching on La Bresse chickens and found this forum.  Love it.  Looking for info on techniques, top choices/breeds for poultry and pork.
