poached chicken leftovers... any ideas other than chicken pot pie?

So I made chicken soup the other day and have lots of chicken leftover. Tonight I made chicken pot pies, but I still have more... one whole breast to be precise. 

 

Any ideas what to do with it?

The other night I made COS - chicken on a shingle.  Shreds of leftover roast chicken piled on toast and covered with a tasty gravy. Quite nice.

Cut the meat in small chunks, add mayo and a tsp of Madras curry powder. Put on baguette. De-li-ci-oso. It has to be fresh crunchy baguette, what else.

Ooh that sounds very tasty too. Curry chicken salad. 

 

Here's what I'm leaning toward for lunch tomorrow: 

 

chicken salad with celery, green onions, apples, almonds, grape, baby spinach, served with warm corn tortillas or some kind of flat bread.

Or you could replace grapes with craisins... touch of smoked paprika and some cardamom or coriander would be nice as well.

Croquettes!!!

 

Mince the chicken finely.  Stir into a thick bechamel with nutmeg and manchego cheese.  Roll into croquettes and chill to set.  Roll in breadcrumbs.  Deep fry.  You're welcome.

Wow, even more great ideas. Thanks again. I'm sure my kids would be all over the chicken croquettes. And that French onion sandwich looks sumptuous. I don't like the sheer idea of craisins, but dried cranberries would definitely be a great addition to the chicken salad I'm thinking of doing today. As for the rest, they're all great ideas for next time. Some will require a bit of googling around, which is always fun... :)
